Crock-Pot Quinoa Lentil Tacos

Going with the theme of self-love this month, I wanted to share a favorite vegan recipe. It's gloriously easy to assemble, and I'm demonstrating self-love when I make it, as it's very nourishing for my physical body and deliciously satisfying for my mental one! It's so important to do things for ourselves that bring us personal joy. YES. We (I) need to do things for ourselves (myself). Repeat until it sinks in. 😉

 You may be asking...is it really worth making?  YUP! Not only mouthwatering served “taco style”, it can be heaped onto mixed greens or eaten all by itself.  It’s also incredibly nutritious (info below compiled from various reputable online sources), so your body will appreciate the self-love you’re giving it.

One final tip… I don’t know about you but I ❤️ cilantro.  If this wonderfully aromatic herb is tantalizing to you too, heap it on! It's full of antioxidants that demonstrate immune-boosting, anticancer, anti-inflammatory, and neuro-protective effects.

Preparation

  1. Add all ingredients to a crock-pot and cook on low for 7-9 hours*.
  2. Assemble tacos as desired and enjoy!

 *All crock-pots are different. With mine, it takes only 5 hours on the low setting!
